Lavender Eggplants

Hello Fellow Eaters!

I found these beauties a few weeks ago at my local Farmer’s Market. The color on them is amazing. They are smaller, more delicate and more sweet to the taste than your regular eggplant. I cut them into wedges and roasted them with a little bit of olive oil (and some summer squash that I also got at the market), and sprinkled them with sea salt. They were so delicious!! I thought I’d share! =)
